This cashew curry sauce is uniquely flavorful.
It tastes super creamy, nutty, and tastes just like a regular curry.

This yellowish and rich in flavor sauce is identical to chicken curry.
But as vegan, we will still taste delicious meals without even putting the artificial vegan chicken in them.

How to make Vegan Curry with Cashew.

It only needs 7 ingredients to make perfect taste and healthy vegan curry with cashews.
That contains 14 grams of protein per serving.

Curry sauce Ingredients

  • 2 cups of raw cashews
  • 1 cup of water
  • ¼ cup of canned full-fat coconut milk
  • 2 cloves garlic. Minced
  • 1 tbsp of curry powder
  • 2 tbsp of lemon juice
  • A pinch of salt and red pepper flakes

Sauté vegetables:

  • 2 tbsp of olive oil
  • ½ onion. Finely chopped
  • large carrot into coins
  • 1 tbsp of garlic powder
  • 1 cup peas
  • 2 red peppers, chopped
  • 1 cup of canned garbanzo beans. Drained and rinsed
  • Adding vegan protein such as ½ box of silken tofu
  • Pinch of salt

Instructions

  1. soak cashews overnight or at least 2 hours with hot boiled water to soften them up
  2. Drain the cashews after being soaked. Put them into a high powered blender
  3. Then add lemon juice, coconut milk, garlic, curry powder, red pepper flakes, and salt. Turn on the blender.
  4. Add the water gradually until you reach the consistency that you want to reach.
  5. To saute the vegetables including the tofu: Heat the skillet with medium heat. Put olive oil on it, then add all of them. Stir and saute well for 4 to 5 minutes.
  6. Your curry sauce is ready to use
  7. Pour it over warm white rice and steamed veggies
  8. If you want to store it, pour it into a freezer-friendly food container and store it in the fridge

Can you store the vegan curry?

You can store your vegan curry sauce in a food container or jar with an airtight metal container.

Keep it in the freezer.
Put it a room temperature directly to the pan and heat it with medium heat.

If you want to save the sauce for a longer period of time, cook the sauce without adding water.
So it looks more like a paste.

Pour them into ice–cube trays and cover them with a plastic bag to freeze them up.

If they are sealed perfectly without letting any air in, it can last to 3 months.
Take them out from the freezer and put them into a skillet with medium heat.

Then add water gradually until you reach the consistency as you wish.
Add salt if you want it saltier and more savory.

What is the substitute for Curry Powder?

If you are wondering what to substitute for your curry powder, the answer is to replace it with garam masala and coriander powder.

The curry powder is made from authentic Indian spices including coriander powder, turmeric powder, garam masala, red chili powder, and fenugreek.

How to flash soaked cashews

Raw cashews offer the best savory and neutral taste that we can use for any cooking recipes.
However it needs to be soaked, it is best to soak cashews overnight.

The longer it is soaked, the softer and creamier it is when you blend it with a blender.
However, some people don’t have much time to soak it first for that long.

There is another method to flash soaked cashews.
It easy and only needs 30 minutes.
All you need is to put 2 cups of water and a cup of cashew into a saucepan.

Bring it to a boil.
Then remove the heat after boiling. Let it soak for at least 30 minutes.
